When Parkhotel Holzner was founded in 1908, the artists and pioneers of the Art Nouveau movement were visionaries, advocating for a new way of life. That's why Restaurant 1908 purposefully bears its name: It fuses the new with the old and sees itself as a place of freedom, curiosity, and joy for life.
Here, sustainability means more than just seasonally-focused regionalism. The Holzner family and their team are committed to supporting small and local cycles, maintaining good and fair collaboration with their suppliers, and handling resources responsibly. Whenever possible, 1908 sources its ingredients from producers in the nearby area. If certain products happen to come from further afield, even greater emphasis is placed on quality, sustainability, and fair production methods.
The Re:vier Cuisine at Restaurant 1908
Head chef Stephan Zippl draws inspiration from the finest regional products and uses them as the foundation for his dishes. Through his intuition for flavors, texture, and sensory perception, he creates compositions aligned with his philosophy, characterized by four components: sweet, sour, spicy, and crispy. Each dish by Stephan Zippl reflects the local area and terroir, delightfully unifying the four components of the Re:vier cuisine. Restaurant 1908 has been awarded multiple times, notably earning 1 Star and the Green Star in the 2022 Michelin Guide.

At lunchtime, the Parkhotel Holzner's bistro offers a handpicked selection of favorite dishes. The bistro is perfect for a quick lunchtime bite to eat when guests are coming and going and prefer a lighter meal. New Tradition Cuisine focuses on using the best seasonal products from small local producers to create the gourmet half-board option for hotel guests. Thanks to shorter delivery routes, increasing the organic component, conserving resources, and promoting biodiversity and animal welfare, the climate goal of reducing the CO2 footprint of the dining offerings from 360 to 180 tons of CO2 is most definitely achievable. Guests can look forward to excellent, seasonal, organic products, which not only taste better but are also immensely better for the environment.
